Tomino Houzan (富乃宝山) is a highly acclaimed, premium Imo (sweet potato) shochu brewed by the historic Nishi Shuzo Distillery in Kagoshima Prefecture, Japan.
It revolutionized the shochu industry by introducing a modern, elegant, and fruit-forward profile to a spirit traditionally known for its rustic and heavy character.
Yellow Koji Fermentation: Unlike most sweet potato shochus that use black or white koji, Tomino Houzan is fermented with yellow koji—the same variety traditionally reserved for premium sake. This choice yields a light, sophisticated, and remarkably floral aroma.
Premium Ingredients: It is crafted single-distilled from carefully selected Koganesengan sweet potatoes cultivated by local Kagoshima farmers, blended with pristine local spring water.
Low-Temperature Brewing: The mash is fermented at low temperatures, mimicking the meticulous ginjo sake brewing process to emphasize crispness and clarity over harshness.
ABV: 25%.
Nose: Fresh, delicate, and vibrant with prominent notes of citrus fruits, pear, and wildflowers, underscored by a gentle hint of earthy, roasted sweet potato.
Palate: Soft, tense, and refined with a buttery mouthfeel. It delivers a clean, delicate sweetness of caramelized sweet potato balanced by light herbal and nutty undertones.

On the Rocks (Rokku): The producer's highly recommended serve. Ice tempers the spirit while allowing the crisp citrus and pear notes to shine brightly.
With Hot Water (Oyuwari): Mixing it with warm water opens up the aromatics beautifully, enhancing the rich, buttery texture and sweet potato umami.
Food Pairings: Pairs exceptionally well with fresh sashimi, crispy tempura, grilled black pork (kurobuta), or light fish dishes.
