Varietals: Xarel·lo (40%), Parellada (30%), Macabeu (20%), Chardonnay (10%).

Made from organically grown grapes from the 2019 vintage under the Cava Designation of Origin. The Xarel-lo comes from the high areas of the Penedés, the Macabeo variety from the central area, while the Parellada is grown at an altitude of more than 600 metres above sea level. The Chardonnay, which is the most aromatic variety, is selected from specific low yielding vines. Vinification of the free-run must, under controlled fermentation.

Ageing: At least 12 months in the bottle, before disgorging.
 
Tasting note: Pale yellow colour with greenish nuances. Limpid and bright. Generous stream of fine bubbles, forming a crown. This high quality Cava aromas are intense, bright acidity, druity, dry, complex, refreshing and elegant in the mouth, it has a great balance and long lasting finish. Excellent!

The village of Peralada stands in the centre of the Empordà plain. It is one of the historical centres of the region. With its origins going back to the Middle Ages, the grandeur of the Perelada Castle makes it one of the most emblematic landmarks of the Empordà. The East wing of the castle is fortified, with two impressive towers at the corners. The image of these two towers, reflected in the nearby lake, has become the symbol of the wines and cavas of Perelada. 

Wine has been made at the Castillo Perelada since the Middle Ages, as shown in several documents and parchments from the period to be found in the library. When Miguel Mateu bought this ensemble of monuments in 1923, one of his primary objectives was to revitalize the wine producing tradition, a tradition that is more alive than ever these days and which has incorporated the most modern technology to create wines that make full use of the nuances of the soils and vines of the Empordà.
 
Over the decades the wines of Perelada have had the honour of being chosen for official banquets of unquestionable historical significance, such as the coronation of King Juan Carlos I, the wedding of the Prince and Princess of Asturias or for visits from United States presidents Dwight Eisenhower, Richard Nixon and Gerald Ford.
 
The purchase in 1979 of a bodega in Vilafranca del Penedès, the nerve centre of the D.O. region, allowed Perelada to increase its production capacity and position itself among the main cava producers.
