Ki No Bi — "the beauty of the seasons" — was born from a chance meeting between whisky enthusiasts Marcin Miller and the husband-and-wife team of David and Noriko Croll, who'd spent two decades building Japanese whisky brands before deciding to build something entirely new: Japan's first gin-only distillery, founded in Kyoto in 2014.
The gin uses Kyoto's famously soft Fushimi water and eleven local botanicals — yuzu, sansho pepper, bamboo, and gyokuro green tea among them — each distilled separately across six categories before being painstakingly blended back together, a technique the distillery calls "konwa," meaning harmony.
