Grape varieties : Malbec. Vineyard Surface : 1 hectare. Density : 4500 vines/Ha.

Origin of the grapes: A single plot located at an altitude of 350 m on the Causse, at a place called Rassiels. On this plot there is a beautiful pocket of ferruginous red clay on a limestone base. Our boar friends love this plot, isolated from houses and the road, and take full advantage of a “mini-lake” (in other words, a clay hole filled to rainwater) located right next to it.

Average age of the vines: 60 yo. Yields: 35 hl/ha.

Certification : Organic (Ecocert). Number of bottles produced: approximately 4,500 bt per year.

Vinification & ageing: Vinification in a conical trunk with punching down and pumping over. Maceration of about thirty days. Aging of 18 months also in conical trunk.

Family property of 23 hectares, 22 ha of Côt (aka Malbec) and 1 ha of Rolle (aka Vermentino), located 17 km from Cahors on the Causse Limestone, Combel-la-Serre was created at the instigation of Jean-Pierre ILBERT who decided to leave the local cooperative in 1998 to become independent. His son, Julien, returned to the property in 2003 and works today with Sophie, his wife. Little by little, the couple gives a second wind to the estate: conversion to organic farming (via Ecocert), return to manual harvesting throughout the vineyard with sorting at harvest, work on the different terroirs while respecting nature, reflection on the consistency of the range of wines offered by the domain.
