100% Pinot Noir planted in 1973 at the centre of the appellation on the alluvial cone from the Combe de Lavaux, the soil is rich in sand, stone and alluvial deposits, which explains the finesse and subtlety of this wine.
This wine is more about its texture than its richness. It is very elegant, but still lively and refined at the same time.
Notes of cherry, and a bouquet which is always exuberant.
The nature of the soil results in the grapes ripening quickly, thus requiring rigorous monitoring. Over-ripeness can be a problem. Cold soak for 6 days at 8°C. Wild yeast are allowed to develop and ferment the wine. Cap punching tends to be limited to maintain the finesse. Around 16 days vat time is adequate with a maximum controlled temperature of 30°C.
To help the terroir express itself, 1, 2, or 3 year old barrels are used for around 16 months maturing.
To appreciate this wine’s finesse and elegance, the “rapid” approach, say 5 to 8 years, is sufficient.
The Marchand-Grillot estate cultivates 9 hectares of vines, made up of 47 different plots spread over 5 Cote de Nuits villages: Gevrey Chambertin, Morey Saint Denis, Chambolle Musigny, Gilly les Citeaux and Brochon, each one carefully tended.
